Wash the potatoes and boil them in their skins, in a pot with a liter of water and a teaspoon of salt, for about 30 minutes or until they have penetrated. When the potatoes are cooked, take them out on a tray, leave them to cool and peel them.

Cut the potatoes between 2 wooden spoons, so as not to cut them to the end, but only to get the shape of the fans. Drizzle oil, sprinkle with freshly ground coriander seeds for an intense aroma, a pinch of salt and stick the various pieces of cheese between slices, taking care not to break the potatoes.

Bake on medium heat for 25 minutes or until golden brown.
