It took:

  • warm milk - 300 ml

Filling:

  • cow cheese- 400-500 gr
  • 3 tablespoons greasy sour cream
  • sugar- 100 gr
  • eggs- 2 pcs
  • grated lemon peel
  • raisins soaked in rum essence - 100 gr

For anointed:

  • 1 egg yolk + 1 tablespoon milk
  • brown sugar- 2 tbsp
  • + powdered sugar for decoration

Servings: 12

Preparation time: less than 90 minutes

RECIPE PREPARATION Footstool:


  • For the dough, dissolve the yeast in the warm milk, add 2 tablespoons of sugar and two tablespoons of flour, mix well and let rise for 10 minutes in a warm place.

  • In a bowl of flour put a pinch of salt, grated lemon and orange peel, whole egg and the two yolks and sugar. Mix a little and add the milk with the activated yeast. Mix slowly with the flour and add a little melted butter. Knead by hand, and add more melted butter and incorporate all the ingredients well.

  • Put the flour on the table and turn the dough over and knead it for about 10 minutes, until it sticks to your hands. It is ready when the dough is elastic and fluffy. Then put it in a bowl greased with a little oil, cover it with plastic wrap and let it grow in a warm place for about an hour.

  • Meanwhile, prepare the filling: mix the well drained cottage cheese with sour cream, eggs and sugar. Grate some lemon peel and put the raisins soaked in rum essence.

  • After the dough has risen, divide it in two and spread one rectangular sheet at a time, about half a cm thick. Cut it into squares, put a large spoonful of the filling in the middle and bring the opposite ends inwards. Glue well, so that the cheese does not come out during baking.

  • Then place the cheeses in a tray with baking paper, place them at a distance from each other and cover them with a clean towel because they will rise for another 30 minutes. You'll get about two trays, so don't cram them.

  • After they have risen, grease them with the egg yolk mixed with a tablespoon of milk and sprinkle brown sugar on top.

  • It must stay in the hot oven at 180 degrees for 20 minutes, until it swells and browns slightly. When they are ready, let them cool and sprinkle powdered sugar on top.


Romanian recipe: Poale & # 039n brau cheese pies

This recipe is from the Moldova region of Romania (North of the country), and if the literal translation is. well, not very appetizing - let’s just call it an amazing cheese pie. ‘Poale in brau’ roughly means ‘the bottom of the skirt raised to the belly band’ and to some extent illustrates the shape of the pie, with the folded margins.

Anyway, the short language lesson aside, let’s start cooking.

For 25 feet, you will need

First work on the dough. Put the flour in a bowl and make a small hole in the middle for the crumbled yeast and the glass of warmish water. Stir gently to dissolve the yeast. Then add the glass of oil, 100 g of sugar, half of the lemon zest and two eggs. Slowly incorporate the flour into this mix until obtaining an elastic, non-sticky dough. Knead energetically for a couple of minutes, than let it rest in a warm place until it doubles in volume.

After that, put some flour on the table or the work area and from the dough create a finger-thick layer using the rolling pin. Cut this layer into many squares with sides of around 15 cm.

Meanwhile prepare the stuffing. Mix the cheese with the raisins, one egg, 100 g of sugar, the rest of the lemon zest. Put a spoon of this stuffing in the middle of each of the dough squares and then fold every corner in an envelope style. Make sure to press each corner so that they stay together. Then, fold the corners of this new shape again to the middle.

Oil the baking tray or sheet and then place a thin layer of flour on it - or use special baking paper - and put the pies on top, leaving a few centimeters between them, as they will rise in the oven. Paint the pies with egg - the composition used for scrambled eggs, as it will give them a nice color. Then leave them for ten more minutes. After this, put them in the oven for half an hour. When they're done, dust with icing sugar and serve.

Moldovan lap

Who hasn't eaten so far poale-n brau moldovenesti or cheesy, you must try them at least once. For me, the first meeting with my feet on my lap did not happen in Moldova, but in Transylvania.

Being a traditional Moldovan recipe, it would have been normal to eat it in Moldova or at least made by a skilled Moldovan housewife, but no, the first cheesecakes were skillfully made by an old woman from Transylvania, in a wood oven. How good they were! If I close my eyes, I still feel the fragrant taste of the homemade cow's cheese filling and the dough that melted in the fluffy mouth that it was.

Today, "inspired" by the bad weather outside, I made two fluffy and delicious lapels. The recipe is not hard to make, it may seem a little meticulous for those less accustomed to dough, but I assure you that the result is worth the effort.

1. Put the yeast in a bowl. Add 1 tablespoon of sugar (out of the total recommended 40 grams). Rub well with a spoon until the yeast liquefies. If you use dry yeast, simply dissolve it in a little warm milk.

2. Heat the milk together with the butter until the butter is completely melted. Add the remaining sugar and vanilla. Mix well.

3. Rub the yolks well with salt, then dilute with milk mixed with butter, which must have cooled to a temperature of 35-36 ° C. After the yolks are perfectly homogenized with the milk, the activated yeast is added over the liquid mixture.

4. Sift the flour into a large bowl. Add the grated lemon peel and mix well. Make room in the middle and pour the liquids, stirring constantly with a wooden spoon. 5. While the dough is growing, mix the cottage cheese, which must be well drained of whey, with the sugar, lemon peel, vanilla, salt, semolina or breadcrumbs, 2 egg yolks and raisins (if you use them). Mix well and set aside.

Modeling and baking pies

6. When the dough has risen, sprinkle the work surface with flour and pour the dough out of the bowl. It extends with the palms in the form of a rectangle about 20 * 40 cm. Cut into 8 squares as equal as possible.

7. On each square, place 1 tablespoon of filling in the middle. We don't have to put too much, because the cheeses will crack when baked. Gather the opposite corners of the square above the filling and press firmly, sticking well. Thus, the specific shape of lap pies is given. Put the cheeses thus formed in a tray covered with baking paper, with space between them, because they will grow a lot.

8. Cover the tray with a clean, double kitchen towel, and let our cheeses rise for another hour. Meanwhile, turn on the oven and set at 190 ° C, static.

9. Before baking the cheese, grease it with a soft pastry brush with the mixture of yolk and milk. Bake in the preheated oven at 190 ° C, at an average height, for 15-18 minutes, until nicely browned.

10. Remove, allow to cool slightly in the pan and powder with vanilla powdered sugar. They are good to serve slightly warm or completely cold.
