Wash the pears.

Clean the skin and seeds (I kept the top of the pears for the final decoration) and cut them into cubes.

Separate the yolk from the egg white.

Whisk the egg whites.

Rub the yolk well with the 'sugar', add the mascarpone cheese and mix for 5 minutes (on the robot).

Gradually incorporate the beaten egg whites and caramel essence. Add half of the diced pears and mix gently.

Prepare the poisons.

Put pear cubes on the bottom, the composition with mascarpone and pears on top.

Sprinkle with cocoa and decorate as desired.

Let cool for 2 hours.

Serve with gusto.
