Step 1. As I said, the most painstaking thing is to cook and clean the peppers, which is why we will start with this. We wash the peppers and then bake them on all sides. You can do this either on a wood or electric hob, or on a board placed on a stove eye or on a charcoal or electric grill. I used the electric grill provided. After they were well cooked, I put them in a bowl with a lid, so that they would stay for about 5-10 minutes, so that they would sweat. The steam formed will make the peeling operation easier! Peel a squash, grate it and squeeze the juice.

Observation:If you want, sprinkle the baked peppers with salt and cleaning the skin will be much easier!

Step 2. Prepare the sauce in a bowl in which we put the tomato juice, finely chopped or crushed garlic, our favorite oil, vinegar and spices and mix them very well. The sauce is ready!

Aobservation: Instead of tomato juice you can use 3-4 fresh, larger tomatoes, cleaned of seeds and peel and finely chopped!

Step 3. Put the baked peppers in a salad bowl or plate, so whole and garnish with the previously prepared sauce and finely chopped parsley greens.

The salad can also be made with kapia peppers.


It can be prepared in larger quantities but can be consumed in a maximum of 2-3 days!


You can also use basil in the baked pepper salad, if you like.


The salad will be tastier if you let it cool for at least an hour before serving.


Serve the baked pepper salad with a roast with baked potatoes or eggplant, caramelized in the oven.

If you do not want to leave the whole peppers in the salad, you can split them into 2-4 pieces and remove the stalk and seeds.

Instead of tomato and garlic sauce you can use as a dressing, a vinaigrette composed of vinegar, salt, pepper and olive oil.

Bake the peppers on a tray, turn them on all sides, taking care not to burn them. Even if their skin is blackened, this is not a problem, it will be removed.

When they have softened, put them in a bowl, sprinkle with salt and leave for 30-40 minutes, this way the peel will come off easily. After peeling them, let them drain well.

An oil, vinegar, salt and pepper are made into a sauce, which is poured over the peppers. Then add the tomato sauce and crushed garlic and a little water if needed. If vinegar is used for salads, a teaspoon of honey or sugar can be added.

Baked pepper food with eggplant

This recipe by baked pepper food with eggplant is a kind of "remake" of the recipe pasta with baked pepper sauce which I wrote to you last month (you can find it here). I had started for the kitchen with the thought of cooking another portion of pasta with pepper sauce for lunch, but, as is my habit, I changed my mind at the last moment.

A poorly baked eggplant was waiting awkwardly for me, which was not required to be transformed into an eggplant salad. Too little would have come out of a single eggplant. And then the idea came to me to use it and not to make pasta but a baked pepper food with eggplant. Said and done!

Just like "original" recipes, this one is easy to make and is a quick recipe. That is, if, obviously, we do not take into account the time allocated to baking peppers and eggplants. And let's not forget, to specify, for those interested: it is a fasting recipe (vegan).

  • 400 grams of baked peppers
  • a small eggplant, pre-cooked
  • two tablespoons of olive oil
  • three cloves of garlic
  • two tablespoons of broth or two or three medium-sized tomatoes
  • a cup of water
  • a teaspoon of salt
  • a quarter teaspoon of ginger (optional)
  • finely chopped chilli flakes or hot peppers (optional)
  • a handful of finely chopped parsley (optional)

Baked pepper recipe with eggplant

  1. Cut the baked peppers into strips lengthwise and then widthwise. You can also try to cut them into cubes. It doesn't necessarily matter the final shape, but that's how I liked to cut them.
  2. Heat the oil in the pan and add the finely chopped garlic. Let it brown a little and then add the broth mixed with a cup of water.
  3. If you use tomatoes, cut them into cubes and add them but do not add water. The cooking time of the sauce will differ a little, the tomatoes being raw. Let it boil for about ten minutes until it cooks and a sauce begins to form.

Baked pepper paste recipe with walnuts

500 grams of baked peppers cleaned of seeds and peel
100 grams of walnut kernels
juice from half a lemon
a clove of garlic
