cup lemon juice, freshly squeezed (about 8-9 large lemons)


cups sparkling mineral water (chilled)

    Combine the lemon juice and sugar and plain water in a 2 quart pitcher. Stir until sugar has dissolved. Add the raspberries and chill 6 hours, or overnight.

    After chilling, add the chilled sparkling mineral water. Stir to combine.

    Serve over ice, if desired, and garnish with lemon slices.

  • To me, it just screams "Summer" with its cold fruity taste. Every time I drink a glass of lemonade, I am transported back to the hot and humid summers of my childhood years in Houston. A tall glass filled to the brim with ice and lemonade always reminds me of weekends spent with my dad while he grilled something yummy on the barbecue for dinner.

    And it definitely brings back memories of the countless lemonade stands my siblings and I had parked on the neighborhood street corner: How we would spend the entire afternoon out in the hot sun selling plastic cups of lemonade for 50 cents each, or the way we thought we were hot stuff when we'd made a whole $5 by the end of the day, which probably didn't even cover our "expenses" and definitely wasn't worth our efforts. But it was fun anyway and something every child, no matter the decade, seems to experience. I can't wait for the day when my son decides he is going to have his first lemonade stand. It will surely be an occasion worth remembering.

    Pink Lemonade was a staple during hot and humid summers in Houston, and while this fresh Sparkling Raspberry Lemonade is pink, it's definitely a more sophisticated version of my childhood pink lemonade made from concentrate.

Sparkling Raspberry Lemonade

He runs at us full-force and pushes his entire body weight in attempts to get us to fall over. I made the mistake a few times of “falling over”and now he’ll run at me full force trying to “knock me over” just about every hour of the day.

He’s stubborn enough that if we don’t fall over the first (or tenth) time he tries, he just keeps trying. Each time, he gives himself a few more feet of running “ramp up.” Essentially he runs the entire length of our hallways and pushes his entire body into us. And once we’re down? Well it goes just about like this. With him giggling the entire time.

Clearly a cold refreshing drink to combat his tackles are in order. I shared this sparkling blueberry lemonade last year and it’s been crazy popular with you all. I’ve loved seeing your recreations and getting your comments on that beverage.

So here we’ve got sparkling raspberry lemonade except this version is even easier!! Seriously, like 5 minutes prep and that’s IT. It is insanely quick to make and it’s been a hit wherever we’ve taken it.

I made raspberry lemonade several different ways and took all the different versions to a party and had everyone vote (seriously, I know, life of the party right here…) But thanks to everyone’s votes, I’m sharing the winning version today and I hope you all love it as much as we have!

How to make Homemade Raspberry Lemonade

Start with the simple syrup. The syrup needs to cool completely and tastes best after sitting in the fridge for a few hours so the flavor can develop. I like to make mine one day in advance so I just have to assemble the lemonade on the day I want to serve it.

You can use fresh or frozen raspberries for this lemonade. I recommend using frozen raspberries to make the syrup. The frozen ones are harvested when they are perfectly ripe and frozen immediately. They’re sweeter and more flavorful than fresh raspberries which often travel long ways until they get to the supermarkets. But if you get your hands on perfectly ripe and sweet fresh raspberries you can use them, too!

When the simple syrup is cooked strain it to get rid of the seeds, then refrigerate it until you’re ready to assemble the raspberry lemonade.

Assembling the raspberry flavored lemonade is very easy and takes only a few minutes. Combine a few fresh raspberries or blackberries and a handful of mint leaves in a large pitcher. Use a muddler to mash the two together to release the flavor of the mint.

Add the other ingredients, garnish with a few mint leaves, lemon slices, and fresh raspberries and serve over ice cubes. So refreshing!

You can use sparkling water to make the lemonade or if you’re like me and have a sweet tooth make your lemonade with sparkling lemonade for an extra flavor kick. I love to use this sparkling lemonade from San Pellegrino. It tastes like summer!
