The pizza con la crema is a traditional Neapolitan dessert that is usually prepared at Easter, but which we find on Sunday tables or in buffets. It is a simple dessert, a closed tart like American pies, prepared with a base of shortcrust pastry with lard and a delicious filling of custard and sour cherries in syrup. The cream and sour cherry tart is one of the few desserts my grandmother prepares, for her there are only the pastiera, the struffoli, the migliaccio and the zeppole di San Giuseppe. Method

How to make pizza with cream

for the shortcrust pastry:

Start by preparing the shortcrust pastry.
Put the flour, butter, lard, sugar, eggs, baking soda and grated lemon peel in a bowl

Knead until you get a homogeneous mixture.

Then make a ball with the dough, then put in the fridge to harden for about 30 minutes.

Meanwhile, prepare the custard
Cut a vanilla pod lengthwise then put it in a saucepan with the milk and bring to a boil. Turn off the poin and leave to infuse for about ten minutes.

In a bowl, whisk the egg yolks with the sugar.

Incorporate the sifted flour.

Lift the vanilla pod that you left to infuse in the milk, pour the milk slowly into the egg mixture and mix.


Transfer the mixture to a saucepan and cook the cream, stirring constantly so as not to create lumps. Let it simmer until the cream thickens.

Remove the custard from the heat and let it cool, stirring occasionally.

Take the pastry from the fridge and divide it into two parts.

Roll out the first part on a floured pastry board to obtain a sheet of about 4 mm thick.

Then line a mold with parchment paper and cover it with the layer of pastry and prick the base.

Then add the cream and arrange the cherries in syrup on this.

Finally cover with the second half of pasta.

Cut away the excess dough and seal the edges well with the prongs of a fork.

Bake the pizza with the cream in a preheated convection oven at 170 ° C and bake for about 50 minutes or until golden brown.

Let cool completely, then sprinkle with icing sugar and serve.
