This is a first course that I improvised the other day for a quick lunch for my husband and me. I had some aubergines in oil that my mother-in-law gave me and some very sweet San Daniele raw ham and from there this first course recipe. This preparation of the pasta with raw ham is always prepared by my friend Vera who calls this dish the scazzetta del prete (in reality the scazzetta del prete or del bescovo is a Neapolitan dessert made with sponge cake and strawberries). Names aside, this first course is worth trying;)

Procedure for preparing pasta with raw ham and aubergines
Line an ovenproof dish with 100 g of raw ham.
Cut the mozzarella into cubes and the aubergines and the remaining raw ham into strips.
Cook the pasta in abundant salted water, drain it and mix it in the pan with half of the grated parmesan; add the raw ham, mozzarella and aubergines and mix everything.
Pour the pasta on the bed of raw ham and sprinkle everything with the remaining grated parmesan.
Brown the pasta at 200 ° for about 10 minutes
Flip the pasta over onto a serving dish. Allow to cool then cut into slices and serve.
