Recipe of potato salad with green beans and eggs of 15-05-2013 [Updated on 27-08-2018]
With the first green beans of the season, I prepared this salad by adding potatoes and boiled eggs to have a complete and fresh lunch to take to the office. With the heat of these days, I mostly prepare fresh things and the new seasonal ingredients inspire me for many new recipes to try which you will then see on the blog in the coming days. Unfortunately this morning I have even less time than usual, so I salute you and leave you to the recipe, we will read later

Method
How to make potato and green bean salad
Rinse the potatoes and boil them in a grape pot with water for 40 minutesClean the green beans by cutting the 2 tips then put the water in a pot and when it boils, add the green beans and cook for about 10 minutes
Boil the eggs until hard-boiled
Now peel the potatoes and cut them into cubes
Put the potatoes and green beans in a salad bowl and season with an emulsion prepared with oil, salt, pepper, parsley and garlic cut into small pieces
Peel the hard-boiled eggs, cut them into wedges and place them on the potato and green bean salad then serve
