THE salty dorayaki they are a valid alternative to the most popular sweet dorayaki. When I was in Tokyo I saw these pancakes in all sauces, from the classic one with bean jam filling to those with matcha tea dough, so I said to myself ... why not make a version of it for the blog salted? And here I am :)
Once the dough is prepared and cooked, you can choose to fill it as you see fit, I opted for a mix of speck, lettuce and tzatziki, truly irresistible!

How to make salty dorayaki
In a large bowl, mix flour, beaten egg, honey, salt, parmesan and yeast.
Finally add the milk and continue stirring until the mixture is free of lumps.
Let the batter rest for 15 minutes.
After this time, grease a non-stick pan and put a ladle of mixture in the center. Cook over medium heat until the dough makes bubbles on its surface, then with the help of a spatula, turn and cook on the other side.
It will take a couple of minutes for both sides, just long enough for the dorayaki to darken.
As they are cooked, set them aside to cool.
At this point, move on to the filling and spread a layer of tzatziki on half of the dorayaki.
