I prepared the balsamic vinegar reduction by boiling the vinegar together with the wine until it dropped to more than half of the initial volume, then I added the honey and left it on the fire for only a very short time.

Roast turkey on a tray

Ingredient:

- a whole thawed turkey (about 5 kg)
- 2 cups of fresh orange juice (out of 6 larger oranges)
- a cup of water
- 3/4 cup whiskey or bourbon
- 1/3 cup molasses or maple syrup
- 3/4 tablespoon of salt
- 4 peeled oranges
- 3 tablespoons white flour
- orange slices (optional)
- parsley branches (optional)

1. Discard the neck and entrails (if they have not already been removed). Rinse the turkey well with cold water and remove excess water with a paper towel. Mix the orange juice, water, half a cup of bourbon and molasses / maple syrup in a large, sealable bag. Add the turkey, seal and leave to marinate (in the fridge) for 4 to 24 hours, turning the bag from time to time. Take the turkey out of the bag and put the marinade in a bowl.

3. Tie the ends of the turkey's legs with a string. Sprinkle half a teaspoon of salt inside the turkey, then add the whole oranges. Place the turkey on a lightly greased baking tray. Leave to cook over medium heat for 3 hours (cover with foil if it starts to take on a too pronounced brown shade). Take the chicken out of the oven. Cover it again with foil and let it sit for at least 10 minutes before serving. Remove the oranges.

4. Pour the marinade from the bowl into a deep pan and bring to the boil. Clean the foam from the surface and throw it away. Reduce the flame to low and let it cook over low heat until the sauce is reduced to about 3 and a half cups (it will take about 15 minutes). Mix well the remaining quarter of a cup of bourbon and flour in a bowl. Add to the already low marinade and bring to the boil again, boiling for another 1 minute. Stir constantly and incorporate a quarter teaspoon of salt.

I want to offer you this delicious salad recipe, because I am convinced that you are as hot as I am. Who would sit next to the oven, for a time like this, and especially, why would we do it, if we can prepare something good and satisfying in 5 minutes, without any heat processing? So, my salad with smoked fish and arugula, light, fresh and perfectly balanced, is also very permissive in terms of ingredients: do you not like it, or do you not have one of them? Do not use it or replace it with something you like. There is no bath if instead of fish, in the end, use a little cold chicken, if you give up onions, garlic or tomatoes. What should not be missing, however, is black toast, preferably homemade, Dijon mustard (which is irreplaceable), a good quality extra virgin olive oil and arugula, spicy and fresh, without this salad it wouldn't even have been told :). Therefore, keep in mind that the list of ingredients does not contain exact quantities, all ingredients can be added at will, but necessarily keeping a balance between them.

Ingredients salad with smoked fish and arugula:

  • 1 fillet of 150-200 grams of smoked fish, whatever you like (I used a mullet fillet that I smoked on the grill)
  • 4-5 slices of black bread (I used a whole spelled whole wheat bread, very tasty)

For starters, prepare the dressing, mixing homogeneously the lemon juice, mustard and extra virgin olive oil.

Toast the bread (on the toaster or on the stove), then rub it well with the user's puppy, to soak it with its aroma.

Cut the bread into cubes and put it on the plate where you want to serve the salad and sprinkle with 1/3 of the dressing.Place the pieces of smoked fish without skin on top of the bread (preferably the fish is cut or broken, I broke it into pieces). Add on top of the onion cut into rings or scales and sprinkle generously with another 1/3 of the dressing.Add the arugula over the fish and sprinkle with the remaining dressing.

Finally, add the sliced ​​and sprinkled tomatoes (only if desired) with a pinch of salt. Grab the plate with confidence and stick the fork firmly! : P


How to marinate turkey meat in brine?

All turkey recipes provide for marinating meat in plain brine. A technique for tenderizing and moisturizing lean meat, which gives spectacular results. The salt water solution, sometimes with sugar and aromatic herbs, penetrates through osmosis the muscular tissues of the meat and hydrates them very well. The meat will remain tender and juicy after cooking (baking). Not even a mention of dry, sour or creamy meat!

The saline solution (brine) can also be used for game or lean pork (see here some extra-tender and juicy pork chops that melt in your mouth).

Brine is prepared from cold water in which kitchen salt is dissolved: 1 teaspoon with a pinch of salt for every 250 ml of water. Immerse the meat in this salted solution and leave it in the fridge for a while. Depending on the size of the pieces, marinating can take from 2-3 hours (for slices of meat or smaller pieces), 24 hours for turkey legs or wings or 2-3 days for whole turkey. The turkey can also be marinated with beer & # 8211 see at the end of the recipe what I'm talking about.

So I marinated the turkey legs in a large bowl. I placed the turkey legs in a large bowl and poured cold water with a graduated cup over them, to know exactly how much water I put. The thighs must be well covered with water. Then I calculated how many teaspoons of salt I should put. I mixed the salt well to dissolve in water, covered the thighs with a turned plate to keep them immersed in brine and let the dish cool for 24 hours.
